Fresh grain Russian sturgeon caviar consisting of medium sized and large gray, yellowish, brown and black eggs up to 4 mm in size. The caviar has a rich taste. The mass content of table saltm is between 2.6% and 3.2%.

The Osetra sturgeon is in some ways the most interesting of the sturgeon, as it has the widest variety of eggs in terms of size, colour, and taste. It has a distinct, almost nutty taste.
