How to serve Beluga

Chill the tin and open it just before serving. Place it on crushed ice, or spoon the caviar gently onto the mother-of-pearl plate — never press or stir the pearls. Beluga is at its best on its own, straight from the spoon; it also sits beautifully on warm blinis with a little crème fraîche, alongside chilled Champagne or a premium vodka. As a guide, allow about 25–30g per guest when caviar is served on its own: the 125g tin serves four to five. The plate and spoons stay with you for every occasion that follows.
