How to serve 250g of caviar

Chill both tins and open them just before serving, ideally on crushed ice. Begin with the Osetra, then move to the Beluga — from nutty and mineral to rich and buttery. Serve straight from the tin with the mother-of-pearl spoons, on their own or with warm blinis and crème fraîche, alongside chilled Champagne or a premium vodka. As a guide, allow about 25–30g per guest when caviar is served on its own: the two tins serve eight to ten. For a smaller table, open one tin and keep the second sealed in the refrigerator for another occasion.
